Asphodel honey is a rare and prized monofloral honey, found almost exclusively in certain remote regions of Sardinia, where the asphodel plant (Asphodelus microcarpus) blooms briefly in early spring.

Its color is very light, ranging from nearly white to pale ivory, especially when crystallized. Crystallization occurs slowly and finely, forming a smooth, creamy consistency that melts easily in the mouth.

The aroma is delicate and floral, with soft, vanilla-like undertones and gentle notes of white flowers, fresh grass, and sometimes a hint of baby powder. It is subtle and elegant, never overpowering.
